Seriously!

I love Fall… I have to resist the urge to make everything with apples, squash, and pumpkin. But I can handle it… Since I just had a Pumpkin Spice Latte from Starbucks. (PS- Salted Caramel Mocha = not that great).

Tortellini Vegetable Soup— Awesome. I love zucchini in soup! The only thing I changed was using a whole 15 oz can of diced tomatoes instead of 1/2 can. Grated Parmesan is great on top!

Grilled Chicken with Lemon Basil Pasta— Served with some garlic bread and you have yourself a meal! I used the juice from 3.5 lemons, and it seemed like a little much. So maybe use like 2-2.5 lemons?

Hearty Chicken Stew with Butternut Squash and Quinoa— I left out the kalamata olives… I’m not a huge fan. But, I did add a yellow bell pepper and some paprika!

Pumpkin Apple Cider Cake— Seriously the easiest dessert to make EVER. And it’s reaaally good.

Baked Chili Cheese Fries— Hint: there’s no chili involved. It’s all in the spices! They taste awesome, and we added some barbecue sauce to the mixture to make it even more deeelicious. Oh, and she teaches you how to properly cut a potato to make fries… It’s not hard, but for some reason I never really knew how hahaha.

Sesame Ginger Sweet Teriyaki Salmon— If you’re not feelin’ the quinoa, just make it with some jasmine rice 🙂
