Joy the Baker is seriously the woman. Her recipes have never steered me wrong. Ever.
So, naturally, pie #3 comes straight from Joy. Chicken pot pie.
Mike and I both agreed that the crust was perfect for this pie. I mean, there was a ton of butter in it. It kind of made me uncomfortable. But we eat really healthily for the most part, so I just went with it this time… And oh gosh it was just so perfect and awful and amazing at the same time.
There was kind of a lot of prep for this recipe. Cook the chicken, chop and prepare the veggies, cook the veggies.
Mix the veggies in with the sauce after that is cooked… Yeah, seriously, it’s kind of a long process. But really, really worth it.
Roll out the pie crust, fill with amazing things, and put the other crust on top.
I went for the simple forked crust this time. It held together beautifully 🙂
For some reason, making this pie also made me think of Snow White… Or I guess rather made me feel like Snow White in this scene making a pie. Perhaps because her pie also contained peas and had a perfect crust? Once upon a time in first grade (or so), I was Snow White for Halloween. Today, totally not being Snow White for Halloween. Just rocking the same skin tone. But I digress…
Glaze with a beaten egg and add a few slits… and voilá!

He was totally into it. Giggling. Super happy. Heck, he kissed it!
When your kid kisses what you bake, it’s a win. Even if he decides he’s not going to eat it when it’s on his plate… Despite carrots, green beans, peas, and chicken being some of his favorite foods. Whatever, toddler appetite, I don’t understand you and you are unreasonable.
So, despite poor pictures, this was a great pie. We didn’t feel super hot that day, and it was the perfect comfort food. Although, probably a once-a-year food in our house with the heavy cream and copious amounts of butter.

This is the highest-rated pie yet!! I guess maybe we should try more pies on the savory side 😉
